Air Fryer Potato Chips Crispy and Crunchy

Potato chips, or crisps as they are called in other parts of the world, are so good, they are one of my favorite snacks. They are easy to make at home, especially in the air fryer. If you love using your air fryer and you like potato chips give this air fryer potato chips recipe a try, especially if you are looking for a healthier alternative to classic deep-fried chips. They turn out crispy and crunchy and pretty good.

To make potato chips in the air fryer you just need a few simple ingredients:

  • Potatoes – I always use Russet potatoes, they are probably the most common potatoes used to make potato chips. Yukon Gold potatoes will work too, just not as well.
  • Oil – Just a light amount of cooking oil, I always use olive oil, but avocado oil or coconut oil will work too. It adds a touch of flavor and also helps them to crisp up nicely. Although, technically you don’t need any oil at all.
  • Salt – the most popular seasoning. You can of course add other seasonings as desired like ranch seasoning, garlic powder, onion powder, white cheddar, etc.

Tools/Equipment:

  • Air Fryer – This is my favorite air fryer. If you are looking to get a new one, try this one.
  • Tongs
  • Paper Towel
  • Mandoline – Or use a knife if you don’t have a specific slicer. The mandoline works great for getting thin slices.

How to make air fryer potato chips at home

Begin by rinsing the potato or potatoes and dry them really well. Lots of times there is leftover dirt and whatnot on the outside. You can peel the potatoes too if you wish, I never do. However, if you do peel them, save those skins and make this awesome air fryer potato skins recipe.

Now slice those potatoes up really thin, between 1/8th of an inch and 1/16th of an inch thick. Try and keep them as evenly thick as possible. I use my trusty mandoline slice for the job, but a knife will work too.

Place the slices of potato into a bowl with cold water. Allow them to soak for about 30 minutes. After about 15 minutes drain the water and replace it with new water. You will notice the water get really cloudy, that is the excess starch coming out. We need to remove some starch so the potatoes can crisp up nicely without getting too dark. The sugars in the starch are what brown/burn when cooked.

Season and Cook the potato slices

Drain the potato slices and then dry them very well using paper towels or a clean kitchen towel. Then spray them with olive oil or another cooking oil. You can also place them in a bowl and just drizzle some oil on and then mix them around so they get evenly coated. Sprinkle on a bit of salt too.

NOTE: You can leave the oil off entirely as well, but it does help them get crispier and adds a touch of flavor too.

Arrange several potato slices on the bottom of the air fryer basket in a single layer. If they overlap a little bit that won’t be a problem. The slice of your basket will determine how many slices you can do at once. Or if you have a different slice of air fryer with the trays you may be able to do more than one tray.

Set the temperature to 325F or 162C. Then cook the slices of potato for 10 to 14 minutes until golden brown and crispy. Cooking time will vary depending on how many slices you are doing at once and the air fryer you are using. Make sure to flip the chips over at the 5 to 7-minute mark to promote even cooking. Sometimes the slices just fly around inside the basket while cooking, so it doesn’t matter too much, haha.

Now place the freshly air-fried potato chips or potato crisps on a paper towel or wire rack to cool for a few minutes. You can add additional salt and other seasonings to the crispy chips if desired. Enjoy!

How long do homemade potato chips made in the air fryer last?

They will stay crispy for a week or two. Store leftover chips in a brown paper lunch sack or you can use a plastic bag, but that isn’t the best. An airtight container would be better than a plastic bag.

  • Drain and dry the slices really well with a paper towel or a kitchen towel.
  • Spray the slices with olive oil or add the slices to a clean bowl and drizzle a little oil onto them. Mix them around with clean hands or wear gloves to coat them evenly.
  • Sprinkle the thin potato slices with a bit of salt. Then arrange them evenly in one layer in the air fryer basket.
  • Cook at 325F or 162C for 10 to 14 minutes until crispy. Flip them over at the 6 to 7-minute mark.
  • Add the cooked chips to a paper towel or wire rack and let them cool for a few minutes. Sprinkle with more seasonings if desired. Enjoy!

NOTE: The oil is optional but helps make the chips crispier. And adds a bit of flavor.
NOTE: Store leftover chips in a brown paper bag, but if all you have are plastic bags you can use those too.
NOTE: The more even the chips the less likely the edges will get too brown, but don’t be alarmed if the edges get more brown than the middle of the chips.

    Matt, how do you keep your chips from flying around in your air fryer? Thank you

    • It entirely depends on your air fryer, if you have a setting to reduce the fan speed you can try doing that. if you could get a wire rack that fits in the air fryer and put that on top of the chips, that could work.
