I am a huge fan of all things potatoes, I just love them. One of my favorite things to make is this air fryer potato skins recipe. They turn out super crispy and it is the perfect use for all those leftover potato skins that you have after peeling. If you are going to be peeling potatoes for mashed potatoes, french fries, etc., save those skins! They wind up being like crispy potato chips and are so good!

These make an easy appetizer for game day parties, other social gatherings, family meals, etc. Let’s get started!

To make crispy air fryer potato skins you need just a few simple ingredients:

  • Potatoes – You of course need raw potatoes. I usually use Russet potatoes, but you can do this with any kind of potatoes, like Yukon Gold, Red potatoes, etc.
  • Olive oil – The oil is not necessary, but it will add flavor, and help the skins get extra crispy. And it will help the seasonings stick to the potato skins. You can use other oil too if you want.
  • Salt
  • Any other seasonings like black pepper, garlic powder, paprika, etc.

  • Air Fryer
  • Oil Sprayer – optional
  • Tongs
  • Potato peeler
  • Bowl

How to make crispy air fryer potato skins at home

Hand peeling potatoes.

Rinse the potatoes well and then dry them with a kitchen towel or paper towel. Next, peel the potatoes and add the skins to a small bowl. You can cut the skins smaller if desired. I usually just leave them long.

Spraying the potato skins with olive oil.

Spray the potato skins with a bit of olive oil or any other cooking oil that you want to use, like avocado oil, coconut oil, etc. Then add a pinch or two of salt. Give the skins a good mix with your hands and spray again as needed to get the skins evenly coated.

Arrange the seasoned uncooked potato skins in your air fryer basket in a single layer. You can add a bit more if you want, since they will shrink as they cook making more room in the basket, so it is okay if they overlap each other a bit.

Cook the skins at 385F which is 195C for 8 to 10 minutes until golden brown and crispy. Turn them over at the 5-minute mark and spray with additional oil if they look really dry. When they are done add additional seasonings as desired while the crispy skins are still warm.

Pile on a plate and serve. Dip them in this homemade ketchup, eat them plain, or use a different dip like sour cream, ranch dressing, etc. Enjoy!

NOTE: You could also deep fry these if you wanted, but the air fryer uses much less oil.

How long do homemade air fryer potato skins last?

These are definitely best eaten right after they are made, but they can be stored at room temperature in an airtight container for a few days.

  • Cook at 385F/195C for 8 to 10 minutes until golden brown. Turn the potato skins over at the 5-minute mark and add more oil and seasonings as necessary.
  • Remove the crispy air fryer potato skins and add to a plate and serve. Add more seasonings while still warm to taste. Enjoy!
