Apple Streusel Coffee Cake

I just love this homemade apple streusel coffee cake recipe. It is light, fruity, sweet, with an amazing crispy crunchy crumble or streusel topping.

An apple streusel coffee cake, also known as an apple crumble coffee cake, is basically a coffee cake that has apples in it and an awesome topping. Despite the name, it doesn’t have any coffee in it. It gets its name because a lot of people over the years have enjoyed a slice of this awesome cake with a cup of coffee. I don’t drink coffee myself, I always enjoy a slice with a cup of milk.

If you are a lover of cake recipes and love coffee cake, give this version a try. It is really easy to make if I can do it, you can do it. Let’s get baking!

Step 1: Gather the ingredients

In order to make this apple streusel coffee cake from scratch you will need a handful of everyday simple ingredients. You may already have them all in the house.

  • Egg
  • Buttermilk – You can make a homemade buttermilk substitute, or use regular milk.
  • White granulated sugar
  • Butter – Or you can also use an oil like vegetable, coconut, etc.
  • Cake flour – You may also use all-purpose/plain flour if you don’t have cake flour.
  • Baking soda – You won’t need this if you are using regular milk.
  • Baking powder – You will double the amount used if using regular milk.
  • Salt
  • Cinnamon
  • Apples – I like to use Granny Smith, but any apples will work.

Streusel/Crumble Topping

  • Softened butter
  • White granulated sugar
  • Flour – All-purpose/plain flour
  • Cinnamon

  • Bowls
  • Sifter
  • Whisk
  • Spatula
  • 8×8 baking pan

Step 2: How to make homemade apple streusel coffee cake

This coffee cake is really easy to make and the batter comes together in about 10 minutes. Begin by preheating the oven to 400 F/205 C. Wash and then peel, core, and slice up the apples into little chunks. You can use an apple peeler/corer if you like, or just use a normal peeler.

Then in a large bowl whisk the egg, and add the buttermilk, sugar, and then melt the butter, either in the microwave or on the stovetop, just until barely melted, and not hot. Pour the melted butter in as well and whisk everything together.

You can use regular milk if you like if you don’t want to use buttermilk or use this homemade buttermilk substitute. I love adding buttermilk to cakes, because it adds a nice flavor, as well as helps created a softer texture.

Now combine all of the dry ingredients, the cake flour or normal flour, baking powder, baking soda, salt, and cinnamon, in a sifter and sift it into the bowl. Or put it in a separate bowl and whisk it together and then dump it into the main cake batter bowl.

Whisk the dry ingredients in well, until a nice batter forms.

If you are using normal milk, you won’t use the baking soda, and you will need to double the amount of baking powder.

Next, add in all the apple chunks and stir them in to complete the apple streusel coffee cake batter. That was really easy right?

Step 3: Bake the apple streusel coffee cake

Take an 8×8 baking pan or you can use something like a springform pan if you wish or an 10-inch round pan, and grease it with shortening and then flour it.

Meaning, after wiping a thin amount of shortening in the pan, add a tablespoon of flour and then tap it all around the bottom and sides, until coated. Then turn the pan over and tap out the excess. This helps keep the cake from sticking. You can also spray the pan with cooking spray.

Pour the finished cake batter into the pan and level the top off with a spatula. Set it aside while you make the streusel or crumble topping.

Time to make the topping. Add the softened butter, flour, sugar, and cinnamon to a small bowl. Mix it all together with a fork, until it resembles small chunks of damp sand.

Then use a spoon and sprinkle the streusel topping on the apple coffee cake until evenly covered. Bake the cake in the middle rack for 25 to 30 minutes until a toothpick comes out clean.

Once the apple crumble coffee cake has baked remove it from the oven and allow it to cool in the pan for about 30 minutes or so.

Step 4: Serve it up!

Take a cake or pie spatula or butter knife and run it around the edges of the cake to make sure it is loose. Then cut it into 6 to 8 equal slices. Now serve up a slice of that yummy homemade apple streusel coffee cake either plain, or with a scoop of vanilla ice cream, or however else you want to serve it. Enjoy!

How long does apple streusel coffee cake last?

Cover the pan of cake with plastic wrap or foil and it will keep fresh for a few days at room temperature. Store it in the fridge where it will keep 5 to 6 days. You can also freeze the cake for a few months.

  • 1 large egg

  • 1/2 cup white granulated sugar 100g
  • 1/4 cup butter or oil 57g
  • 1 1/2 cups cake flour or all-purpose/plain flour 180g
  • 1/4 tsp. baking soda 1g leave it out if using normal milk
  • 1 tsp. baking powder 5g double it if using normal milk
  • 1/2 tsp salt
  • 1/2 tsp. cinnamon 1g
  • 3 medium apples or 2 large apples granny smith, fuji, gala, etc.

Streusel/Crumble Topping

  • 3 Tbsp. butter softened (45g)
  • 1/2 cup white granulated sugar 100g
  • 1/3 cup of all-purpose/plain flour 40g
  • 1 tsp. cinnamon 2g

Instructions

  • Preheat the oven to 400 F/205 C. Wash, peel, core, and slice the apples into small chunks.
  • In a large bowl whisk together the egg, buttermilk, sugar, and melted butter. Melt the butter in the microwave or stovetop, until barely melted and not hot.
  • Sift together the flour, baking soda, baking powder, salt, and cinnamon and add it to the bowl of wet ingredients. You can whisk them together if you don't have a sifter.
  • Mix the dry ingredient in with the wet using a whisk. Then stir in the chopped apples. The batter is ready to go. Pour the batter into an 8×8 inch baking pan, or use a 10-inch round or even a springform pan that has been greased with shortening and floured or sprayed with cooking spray. Spread it out evenly with a spatula.
  • In a small bowl mix together softened butter, flour, sugar, and cinnamon with a fork until it is crumbly and resembles small chunks of damp sand.
  • Sprinkle the streusel topping evenly over the cake and bake it in the oven, middle rack position, for 25 to 30 minutes until a toothpick comes out clean when poked in the center. Once it comes out of the oven allow it to cool for 25 to 30 minutes.
  • Serve the cake with a scoop of vanilla ice cream, milk, etc. Enjoy!

Note: You can use normal milk if you like. If you do, leave out the baking soda, and double the amount of baking powder.Β

    This cake is so delicious. The cake is tender and moist and the warm apples with cinnamon streusel are the perfect bite!

    I can’t use milk (lactose intolerance) so I used extra creamy oat milk with a bit of lemon juice added. Also used oil in the cake, with butter only in the topping. I was concerned it might not have the right taste/texture, but I don’t notice any lack of richness or flavor, and the cake is moist and light, not heavy. Yummm! Thanks for the recipe.

There are recipes my Mother thought to write down for us, and then there are the one’s she forgot, this recipe is one she never did, but this is exactly how she made it.
