Cloud Bread Only 3 Ingredients

Have you ever heard of Cloud Bread? It has been around for many years but was made famous on TikTok a few years ago. Cloud bread really isn’t a bread it is just a very soft and fluffy Meringue. It is easy to make and a perfect recipe for leftover egg whites.

To make this easy cloud bread recipe you need just 3 simple ingredients:

  • Eggs – You will only use the egg whites.
  • Sugar – It will add a bit of sweetness.
  • Cornstarch – This will add a bit of structure. If you do not have cornstarch you can use flour, tapioca starch, potato starch, arrowroot powder, and other similar starches.

Tools

  • Mixer – A stand mixer is definitely the easiest to use but a hand mixer will work as well. I don’t recommend trying to do this by hand.
  • Sheet pan or cookie sheet
  • Parchment paper or silicone baking mat

How to make cloud bread at home with just 3 ingredients

Preheat the oven to 300F/150C.

Then begin by separating the yolks from the egg whites. It is important to not get any egg yolk in the egg whites. I usually just crack the egg and then shuffle the egg yolk back and forth from both halves of the shell and allow the egg white to fall into the bowl. Save those egg yolks you can use them in other recipes like this easy egg custard recipe.

Next, beat the egg whites with medium speed until frothy. Then keep mixing and add the sugar a little at a time until incorporated. Follow that up with the cornstarch. Use a sieve or sifter and sift the cornstarch into the bowl and then mix. Once that is incorporated mix on high for a few minutes until you get stiff peaks and it resembles shaving cream.

Scoop the mixture out of the bowl and add it to a prepared baking sheet. The sheet pan or cookie sheet should be lined with parchment paper or a silicone baking mat.

Bake it in the preheated oven for 35 to 45 minutes, baking time will vary depending on your oven. It may even take less time than that, in my oven it takes around 45 minutes.

When it is done baking it will be golden brown around the whole thing, it may even look a little orangish. And if you poke it with a wooden skewer it will come out clean. Allow the fluffy bread to cool completely before slicing into it with a serrated knife or you can just tear it apart. This “bread” is usually just eaten plain. It is light, airy, and super fluffy and tastes a little eggy.

How long does cloud bread last?

It is best eaten fresh but it will last a few days at room temperature. You can also store it in the fridge for a few more days.

Can I use this for sandwich bread?

No, this iteration will not be good for sandwich bread. You would want to use a keto cloud bread recipe which uses cream cheese, cottage cheese, or yogurt, and you will reduce the sugar significantly. This will give it better structure and it will hold together nicely for a sandwich. It will still be fluffy.

Cloud Bread TIPS

  • Make sure to use room-temperature egg whites if possible. You can separate the egg yolks from the egg whites while the eggs are cold and then let the egg whites sit out at room temperature for 20 to 30 minutes. Room temperature egg whites whip up better than cold ones, but it isn’t the end of the world if your egg whites are cold.
  • It is very important to make sure the bowl that you are mixing the meringue in is free of oil and fats, so rinse it out really well and dry it well before starting.
  • Make sure there are no egg yolks in the egg whites!

Why didn’t my cloud bread bake all the way?

If your oven is too hot the exterior will get golden before it cooks all the way in the middle. Your oven may be out of calibration, meaning it isn’t registering the same heat as it is set to. You can just continue baking it. The inside should be completely dry, light, and fluffy.

Is there any way to keep the cloud bread from tasting like eggs?

No not really, for this style of cloud bread, egg whites are the main ingredient so it is natural for it to taste like eggs. You can try adding a bit of vanilla extract to it to help mask the flavor. You can fold in some flour as well, but then it will start to resemble an angel food cake instead.

Can I add food coloring to it?

Yes, you can color your cloud bread with food coloring. Just a few drops while you are beating the egg whites until you get your desired shade of color.

  • Allow it to cool completely then cut it with a serrated knife or just tear it apart and eat.

    Can you make a savory version?

    • You could certainly try that, leave out the sugar, and experiment with other flavors. It won’t be as fluffy however, because if you add other things like cheese, they are heavier ingredients. But you could try things like salt and pepper, garlic powder, green onion/chives. People do mix in softened cream cheese, but again, the result is more flat than this one.

    I have been working on this egg white cloud bread for weeks and weeks now. I am a baker and I have lots of access to egg whites and equipment and everything. I have perfected the little dollops. It works best when you use a pastry bag with or without a decorating tip and you just make the little blobs on spray oiled parchment paper. (Stay away from fats as much as you can for all the recipes for egg white clouds.)
    I have been doing the recipe that you have there without measuring the cornstarch or the sugar or anything else that I add anymore. I just do a pinch of things or work with tablespoons. Nutritional yeast is a wonderful savory way to blur out the egg taste and get a cheesy vibe going without having to add any fat to the whipped egg whites, which can make it deflate pretty easily.

    I have put the whipped whites into a loaf pan that was lined with a few squares of parchment paper that were sprayed oiled. It comes out super easy.

    The only thing that I have not tried yet is cooling it outside of the loaf pan so that it dries out. I have not had a successful loaf bread style come out without collapsing. Have a feeling it’s because it was sweating in the loaf pan. I think I need to cool it in the oven with the oven off instead of pulling it out of the oven and letting it cool inside the pan, usually someplace well ventilated. None of those things are right! It could sit on top of the oven maybe (That would probably work fantastic for the dollops since they’re smaller and cool down faster.) but I’m going to try in the oven with it off after baking. I really really want it to work.

    The little dollops are amazing! I make them all the time. You can add cacao powder and I’ve done honey literally poured into the bowl while it’s being whipped and that comes out a gorgeous honey brown toasted color and the flavor’s fantastic. I’ve used date sugar and molasses as well. Also vanilla and even some apple pie syrup for the sweetener. That came out crazy delicious! I wish I could post a picture here of how mine are coming out. They’re just beautiful. And incredibly delicious!

  7. How come you don’t use a loaf pan?

    • I haven’t tried it in a loaf pan, usually it is made like I show here. But you could certainly try it, it is super easy to put together. You could try greasing the pan with butter, or not greasing it, but it will stick and be hard to get out. Similar to an angel food cake.
