You can totally eat this cottage cheese ice cream for breakfast and not feel guilty doing it, haha. Each serving boasts 14 grams of protein and only 185 calories. But it does taste different than regular ice cream.
Technically, it really isn’t ice cream because no cream is being used, so it probably should be called frozen dessert or something like that, but ice cream still works. Let’s get started!
Ingedients

To make this cottage cheese ice cream recipe at home, you need just a few simple ingredients:
- Cottage cheese – I use a 4% milkfat large curd cottage cheese, but you can try others as well. Full-fat cottage cheese is a great choice.
- Peanut butter – Gives it a nutty taste, and I love peanut butter. It can be swapped out for another nut butter as well. Use store-bought or homemade peanut butter.
- Honey – You can use a different liquid sweetener, too, if you want. Maple syrup can be used instead of honey.
- Vanilla extract – This will give it a vanilla taste.

How to make cottage cheese ice cream at home

This recipe is extremely simple; just add all of the ingredients into a blender or food processor and start blending. Start with a slower speed and then go up from there until the ingredients are fully blended and it is smooth with a nice creamy texture.

Pour the ice cream mixture into a freezer-safe container. It could be a metal bread loaf pan, a thing of Tupperware, or any number of other containers, just as long as it is an airtight container. Preferably, a container that has a lid. Or if you don’t have a lid, you can also just add a piece of plastic wrap gently on the top, which will also help prevent the formation of ice crystals.

Place the container in the freezer and freeze for 4 to 6 hours or even overnight until the cottage cheese ice cream has the correct firmness that you want. If you leave it in overnight, chances are it will be frozen solid. Just let it sit at room temperature for 15 to 20 minutes to soften it up before scooping.
It won’t be as creamy as traditional ice cream, but it will be healthier. Scoop and serve it. Add fresh fruit on top, more honey, any of your favorite toppings, etc. Enjoy!
NOTE: If you like, you can take a cup of heavy cream and whip it up and then fold it into the base above, which will create more of a traditional style ice cream and give it a creamier texture once frozen.
How long will this last?
Store it in the freezer where it will last a few months.
Can I add fruit or different flavors to this homemade cottage cheese ice cream?
Yes! You sure can. There are many different variations you can try. Instead of peanut butter and vanilla extract, you can add 1 cup of mixed berries, like blueberries, raspberries, blackberries, and or strawberries. Or you can add peaches, chocolate chips, etc.
Can I make this chocolate flavor?
Yes! Add two tablespoons of cocoa powder to the above recipe, and it will give it a chocolatey flavor.
