They are also fairly healthy, with about 9 grams of protein per pancake and also, and they don’t taste like cottage cheese. So if you are not a fan of cottage cheese, still give these a try; you might like it in this form. It is a great way to add a little bit of extra protein to your breakfast in a tasty way.
Ingredients

To make cottage cheese pancakes, you need just a handful of simple ingredients:
- Cottage cheese – I usually use 4% milkfat large curd, but you can use pretty much any kind full-fat cottage cheese, small curd cottage cheese, etc.
- Banana – The banana needs to be really ripe.
- Honey – To add a bit of sweetness, you can also add sugar, too, if you want, or another sweetener.
- Vanilla
- Almond flour – adds some more protein to the pancakes without the extra carbs.
- Baking powder
- Eggs
- All-purpose flour, also known as regular flour – If you can’t have gluten, use gluten-free flour or just add more almond flour.
- Berries or other fresh fruit – optional

How to make cottage cheese pancakes at home

Begin by adding the banana, cottage cheese, vanilla extract, and honey to a food processor or blender and mix until smooth.

Pour into a separate medium bowl and add the eggs, flour, almond flour, and baking powder, and stir until well combined. You could just do it all in the food processor, but you may overmix it, which can result in a tougher pancake that is chewy and rubbery.
Just like that, the cottage cheese pancake batter is ready to go. At this point, you can fold in berries like blueberries, raspberries, blackberries, or maybe you want chocolate chips, it is up to you.

Time to cook those pancakes. Heat a griddle pan or skillet, or an actual pancake griddle, with medium-low to medium heat (325 to 350ยฐF/162 to 176ยฐC) and add a bit of cooking oil to the pan.
Pour 1/3 to 1/2 cup of pancake batter into the pan and cook the pancakes. You may need to do it in stages, depending on how large the pan is. Cook each side until golden brown; the first side will take a couple of minutes, and the second side will be a bit less. The way you can tell if the first side is done is it will look dry on the edge, and there will be some bubbles on the top.
Serve them up!

I usually like to just drizzle a bit of honey on these, maybe some melted butter to keep them a bit more on the healthier side, but you can serve them however you want with all your favorite pancake toppings, especially fresh berries. Enjoy!
How long do these cottage cheese pancakes last?
They will last a couple of days in an airtight container or ziplock bag in the fridge. After that, freeze them for a few months.
