Easy Apple Pie

I just love this homemade easy apple pie recipe. It has a delicious buttery flaky crust that and the right amount of sweetness.

Ever since I was a little kid I have loved eating apple pie. It is my favorite pie of all time I think. Not to mention one of my favorite kinds of desserts. Serve up a slice of this pie along with a scoop or two of vanilla ice cream and it is pure edible heaven.

Apple pie really is easy to make, using simple everyday ingredients. If I can do it, you can do it. Let’s get baking!

Step 1: Gather the ingredients

In order to make this amazing homemade easy apple pie, you need the following ingredients:

Flaky Crust

  • All-Purpose/Plain flour
  • Chilled Butter – Use salted or unsalted
  • Cold water – I always use filtered water, because my tap water tastes gross.
  • Granulated sugar
  • Salt

Filling

  • Tart Apples – I always use Granny Smith.
  • White granulated sugar
  • Brown sugar
  • All-purpose/plain flour
  • Cornstarch
  • Nutmeg
  • Cinnamon
  • Butter

Step 2: How to make easy apple pie

Begin by making the homemade flaky pie crust. In a large bowl, combine the flour, salt, and sugar and whisk to combine.

Then, cut up the butter into small cubes and add it to the bowl. Use a pastry blender, fork, or even a food processor to cut in the butter.

Continue mixing in the butter until it resembles coarse crumbs and the mixture is blonde in color.

Step 3: Finish the easy flaky apple pie crust

Next, add the water a little at a time, mixing it in with a fork. Once all the water has been added, use your hands and knead the dough a bit until it all comes together. It will feel almost like play dough.

Shape the pie crust dough into a disc and wrap it with plastic wrap. Then chill it in the fridge for about an hour. The chilled pie crust dough will be more flaky when baked as opposed to room temp pie crust dough.

Note: This recipe is enough for 1 pie crust that will fit most pie plates. Double it if you want a bottom and top.

Step 4: Prep the apples

After the pie crust dough has chilled, preheat the oven to 400 F/205 C. Then wash and peel and core the apples. Next cut the apples into chunks.

I always use Granny Smith apples they have the perfect amount of tartness. But you can use other apple varieties as well if you like.

Place the apple chunks in a large bowl. If you like a hint of lemon in your apple pie, you can squirt about a tablespoon or so of lemon juice over the apples.

Step 5: Finish the apple pie filling

In a separate bowl, combine the white sugar, brown sugar, flour, cornstarch, nutmeg, and cinnamon. Whisk those ingredients together and then pour them over the apples.

Stir the apples with a wooden spoon or other utensil until the apples get coated evenly. Alright, the easy apple pie filling is ready to go.

Step 6: Assemble the easy flaky crust apple pie

Remove the pie crust dough from the fridge and roll it out on a floured surface into a large circle that is roughly 1/8th of an inch thick. You can turn the 9-inch pie pan upside down to measure and make sure the crust is rolled out enough. You want a couple of inches extra around it.

Place the pie dough in the pan and gently press it down with your fingers until it fits nicely.

Pour all the apple pie filling into the pie. Then cut up some butter and do the top of the pie. Pile that filling high.

Roll out the other dough and lay it on top of the pie. Use a fork to crimp the edges of the pie together. This is a classic and easy method for crimping the edges.

Now all you need to do is take a knife and trim around the pie and remove the excess pie crust dough. I usually save that dough and usually roll it out and make pie crust cookies, and dust them with cinnamon and sugar.

Poke holes in the top of the pie with a fork. This will vent the pie and release the steam.

Bake the pie in the middle rack position for 40 to 50 minutes until it is nice and golden brown on top. Check it after 30 minutes, if the edges are getting too brown, you can add some aluminum foil to shield the edges.

Step 7: Cool and serve!

Once the yummy apple pie comes out of the oven, let it cool for 30 minutes to an hour before serving it. Eat it as is or serve it up with some vanilla ice cream drizzled with caramel. Yummy. Enjoy!

How long will homemade apple pie last?

If you store it in an airtight container or wrap it with plastic wrap, the pie will last a few days at room temperature. It will stay fresh for 4 to 5 days in the refrigerator.

Can I freeze this apple pie?

Yes, you can freeze it. Wrap it with aluminum foil or plastic freezer wrap, or place in a ziplock freezer bag. It will last for 3 to 4 months in the freezer. When you want to eat it, let it thaw in the fridge, and then heat it in the oven at 350 F/176 C for 20 to 25 minutes.

Ingredients

Flaky Crust

  • (1) 9-inch pie Pastry Crust (double recipe for top and bottom)
  • 1 1/4 cups of All-purpose/plain flour 150g
  • 1/2 cup of chilled butter – cubed 115g
  • 1/4 cup of cold water 60ml
  • 1 tsp. of sugar 4g
  • 1/4 tsp. of salt 1g

Filling

  • 6 to 7 Medium Tart Apples Granny Smith
  • 1/3 cup of granulated sugar 65g
  • 1/4 cup of brown sugar packed (50g)
  • 1/4 cup of all-purpose/plain flour 30g
  • 1 Tbsp. of cornstarch 8g
  • 1/2 tsp. of nutmeg 2g
  • 1/2 tsp. of cinnamon 2g
  • 3 Tbsp. of butter 45g

Instructions

  • Begin by making the pie crust. This recipe is for one 9-inch pie crust. If you would like a top and bottom, double it. In a large bowl, combine the flour, salt, and sugar with a whisk.
  • Cut the butter into cubes and then cut it into the flour mixture using a pastry blender or fork, until well combined. The result will resemble coarse sand and the color will be slightly blonde.
  • Add the water a little at a time and mix it in with the fork. Once all the water has been incorporated, use your hands and knead the dough until it comes together. Then form it into a disc and cover it with plastic wrap. Place it in the fridge and allow it to chill for at least an hour.
  • After the pie dough crust has chilled, it is time to prepare the apples. Preheat the oven to 400 F/205 C. Wash, peel, and core the apples. Then slice them into small chunks and place them in a large bowl. If you like lemon flavor pour on up to 1 tbsp. of lemon juice.
  • In a small bowl mix together the flour, sugar, brown sugar, cornstarch, nutmeg, and cinnamon with a whisk. Next, pour it over the apples and stir until the apples are evenly covered.
  • Roll out the pie crust dough on a floured surface into a large circle until it is about 2 inches larger than the pan and about 1/8th of an inch thick. You can flip the pan over and place it on the dough. There should be roughly 2 inches extra dough all around it. Place the dough in the pan and gently press it down.
  • Pour in all of the apple fillings, piling it high. Then roll out the other piece of dough and lay it on top. Crimp/seal the edges of the pie with a fork. Then cut the excess off. Poke holes in the top with a fork to allow steam to vent.
  • Bake the apple pie in the oven, middle rack position, for 40 to 50 minutes until it is golden brown on top. Check it after 30 minutes, if it is getting too brown on the edges, add some aluminum foil.
  • After the pie is done baking, allow it to cool for 30 minutes to an hour before serving. Enjoy!
