Ingredients

To make these gluten-free high protein brownies you need just a handful of simple ingredients:
- Cottage cheese – Use large curd or small curd cottage cheese.
- Sugar – Or to make the brownies healthier consider using stevia, honey, or another sugar substitute.
- Salt
- Eggs
- Cocoa powder – make sure it is the unsweetened kind that is used for baking.
- Baking powder
- Whey Protein powder – Use vanilla or chocolate.
- Chopped walnuts – This optional ingredient gives it a nice crunch.
- Chocolate chips – This optional ingredient makes them taste that much better, but contributes greatly to the calorie total of each brownie. Consider using zero-sugar chocolate chips to make them healthier.

How to Make High Protein Brownies that are Gluten Free Too

Begin by preheating the oven to 375F or 190C.
If you would like to blend the cottage cheese first, do so now in a food processor or blender. Then add it to a large bowl.
NOTE: I don’t usually blend the cottage cheese; I don’t mind a few chunks in the finished brownies, haha.
Now add the sugar or other sweetener, and the eggs, and mix until combined. Then, in a separate bowl, whisk together the salt, baking powder, cocoa powder, and whey protein powder, or sift it straight into the main bowl.
Stir the cocoa powder mixture in with a whisk or spatual or an electric mixer. Then add the optional chopped walnuts and chocolate chips. And there you go. The batter is done and ready to be baked.
Bake the Gluten Free Brownies

Line a small baking pan, such as a 5×9-inch loaf pan, with parchment paper or spray it with cooking spray, or you can rub shortening all over the inside of the pan.
Bake it in the oven for 20 to 25 minutes until a toothpick comes out clean.

Once it has baked, allow it to cool for 15 to 20 minutes before cutting it into squares and serving it. I usually cut it into 8 squares.

How long do these homemade high-protein brownies last?
If stored at room temperature in a ziplocked bag or an air-tight container, they will stay fresh for a day or two. Better to store them in the fridge for up to 7 days. They can also be frozen for a few months.

- 2 Tbsp of sweetener sugar, stevia, honey, etc. (28g)
- 1/8 tsp of salt 1/2g
- 2 large eggs
- 2 Tbsp of cocoa powder 14g
- 1 1/2 tsp of baking powder 7g
- 1 scoop of whey protein vanilla or chocolate (30g)
- 1/2 cup of chopped walnuts optional (60g)
- 1/2 cup of chocolate chips optional (80g)
Instructions
- Preheat the oven to 375F or 190C
- Add the cottage cheese, sugar or other sweetener, and the eggs to a large bowl and mix with a whisk or food processor. NOTE: You may want to put the cottage cheese in a blender or food processor first, if you don't want some chunks of cottage cheese in your brownies.
- Next, add the salt, baking powder, cocoa powder, and whey protein powder to a shifter or sieve, and add it to the bowl. Stir them in.
- Add walnuts and or chocolate chips if desired.
- Line a small baking pan, like a 5×9-inch loaf pan, with parchment paper, or spray it with some cooking oil or use shortening.
- Add all the batter to the pan. Then bake it in the oven for 20 to 25 minutes, until a toothpick comes out clean.
- Allow it to cool and then cut into squares. I usually make 8 brownie squares.Enjoy!
