I am a fudge lover and this homemade butterscotch fudge is awesome. It is so simple to make with just 3 ingredients. If you love butterscotch and you love fudge you have got to try this easy butterscotch fudge recipe.

Ingredients

butterscotch chips, sweetened condensed milk, and butter on top of a white countertop.

To make butterscotch fudge at home you need the following simple ingredients:

  • Sweetened condensed milk
  • Butter – The butter can be salted or unsalted
  • Butterscotch chips

NOTE: You can also add a pinch of salt and a little vanilla extract if desired.

Squares of butterscotch fudge on top of each other creating a pyramid.

Tools/Equipment:

  • Microwave safe bowl
  • 7×11-inch pan or 8×8 inch pan
  • Parchment paper or wax paper
  • Spatula

NOTE: If you want to use the stovetop burner instead of the microwave, you will need a medium pot, preferably one with a heavy bottom used for candy making.

How to make homemade butterscotch fudge

Finger pushing butter into a bowl of sweetened condensed milk.

Add the sweetened condensed milk and the butter to a microwave-safe bowl. Then heat on high in the microwave for 2 1/2 to 3 1/2 minutes until the butter completely melts. It will get airy and bubbly while it heats up, that is normal. Stir it at the 1-minute mark.

OR

You can place both ingredients into a medium pot preferably with a heavy bottom and set it on your burner. Use medium heat, and heat the butter and milk up until the butter melts and it gets a roiling bubble. Stir occasionally so it heats evenly.

Several butterscotch chips in a bowl of hot sweetened condensed milk and melted butter.

Now remove the very hot milk from the microwave or the burner if using a pot on the stovetop and pour all butterscotch chips in it. Push them down with a spatula. Then wait for about 5 minutes. This is a similar process to making a ganache and is pretty much the same process as this easy chocolate fudge recipe.

hot butterscotch fudge in a medium glass bowl.

Stir well until you have a nice thick butterscotch fudge.

At this point you can also add any additional ingredients like nuts, coconut flakes, etc.

Let the butterscotch fudge set

Pouring hot butterscotch fudge into a pan lined with parchment paper.

Pour the fudge into a 7×11 or 8×8 inch pan lined with parchment paper or wax paper. Use a spatula to spread it out evenly if needed. If you don’t have parchment paper or wax paper you can spray the pan with a little cooking oil or wipe the oil in the pan with a paper towel.

Finished butterscotch fudge in a pan.

Place the fudge in the fridge and let it cool for 30 to 60 minutes or longer, sometimes it takes a few hours to set properly, meaning it is firm enough to cut and keeps its shape.

Finished homemade butterscotch fudge sliced into little squares.

Once the fudge has set remove it from the fridge. I like using parchment paper or wax paper because now you can lift up the fudge in the paper and easily remove it from the pan.

Slice the fudge into little squares, you will be able to get several servings out of this recipe, around 50 squares, depending on the size you make the squares.

Now all you have to do is eat that butterscotch fudge. Enjoy!

TIP: If your knife is sticky you can try spraying it or rubbing it with a little cooking oil or run it under hot water to heat the knife then wipe it off. The hot knife will cut through the fudge more easily. If the fudge is still fairly soft you can put it in the freezer for 15 to 30 minutes then try cutting it.

How long does this 3-ingredient butterscotch fudge last?

Store the homemade fudge at room temperature for about a week as long as it is not too hot inside your house. You can also store it in the fridge for 2 to 3 weeks. You can also freeze butterscotch fudge for 3 to 4 months. Place the fudge squares in layers with a piece of parchment paper or wax paper in between each stacked layers so the fudge doesn’t stick to each other.

Why didn’t my fudge set?

If you are having problems with the fudge setting most likely the culprit is that the butter and milk weren’t heated up to a high enough temperature. The sweetened condensed milk and butter when together need to be around 240F/115C, before adding the butterscotch chips. I don’t normally have an issue with it when using the microwave, but you can also use a candy thermometer to help test the temperature.
