Ingredients

To make these simple 3-ingredient peanut butter cookies, you will need the following simple ingredients:
- Peanut Butter – You can use pretty much any creamy peanut butter or even crunchy peanut butter. If you want them less sweet with less sugar, make sure to use natural peanut butter, like this homemade peanut butter recipe. Or any store-bought no-sugar-added peanut butter.
- Sugar – The white sugar will help, of course, add sweetness, but also provide a lightly crispy texture. The sugar also provides structure. You can also use brown sugar or a combination of both.
- 1 large egg – the egg will act as a binder and give moisture to the cookies. And a wee bit of protein to make these “healthy,” haha.
NOTE: If you want to add a bit more flavor and don’t care about keeping this recipe at 3 ingredients, add a bit of vanilla extract. And a tiny pinch of salt.

Tools and Equipment
- Mixer, either a hand mixer or stand mixer with paddle attachment, or just use a wooden spoon

How to make 3-ingredient peanut butter cookies

This cookie recipe is incredibly simple to make. Begin by preheating the oven to 350°F, which is 176°C. Make sure the main rack is in the middle position in the oven.

Add the peanut butter and the sugar together and blend until well combined. Give the bowl a scrape with a spatula and then add the egg and mix that in. If you don’t mind adding more than three ingredients, add a half teaspoon of vanilla too.
And there you go! The homemade peanut butter cookie dough is ready. Super simple, right?
Bake the Peanut Butter Cookies

Put on some kitchen gloves, or you can just use your hands, make sure they are clean! Use something like a Tablespoon or mini cookie scoop and scoop out some dough, and then roll it into dough balls and place it on a sheet pan lined with parchment paper or a silicone baking mat. Any cookie sheet or cookie pan will work.
Then place each one about 2 inches apart; they really don’t spread that much. Press down one with a fork to flatten it and make the traditional lines or criss-cross pattern, then press it down the other way to make a grid in the cookie.

Bake the cookies for 10 to 14 minutes until lightly golden brown. Then allow them to cool for a few minutes before transferring them to a wire rack to cool completely. Then eat them!
How long do these homemade easy peanut butter cookies last?
Store them in an airtight container or cookie jar at room temperature; they will last a week or two. You can also put them in a freezer-safe container and freeze the cookies for long-term storage.
