Have you ever tried making waffles with a potato? It is actually super easy and a lot of fun. Potato waffles are a great way to try something new with your potatoes, or a perfect way to use those leftover baked potatoes you have sitting in your fridge from last night’s dinner. If you are a potato lover like me, you will love this recipe!
Ingredients

To make potato waffles at home, you just need a couple of ingredients, nothing fancy here:
- Potatoes – I recommend using small to medium potatoes, but if all you have are large ones, you will wind up needing to cut them in half later.
- Oil – I use olive oil, but avocado oil or coconut oil will work great too. Clarified butter works amazingly as well.
- Seasonings like salt and pepper

- Waffle Iron is the exact one I own, but they are pricey and restaurant-quality. I’ve had mine for over 15 years. This one should work just as well and is much more affordable.

How to make Potato Waffles

Begin by rinsing and drying your potato or potatoes. Then poke some holes in them with a fork. Next, they need to be cooked until they are really soft. You have a few options you can:
- Cook them in the microwave on high for 5 to 8 minutes until really soft.
- Cook them in the Oven at 400F for 45 to 55 minutes until really soft
- Or you can boil them for 20 to 25 minutes until really soft.
Once cooked, you can peel them or leave the peel on; it is entirely up to you. I love the potato skin, so I always leave it on.
Start preheating your waffle iron. Make sure to spray it with cooking oil.
Now poke more holes in the cooked potato. This will help them flatten out more easily in the waffle iron.

Next, spray the cooked potato with cooking oil like olive oil, avocado oil, coconut oil, canola oil, etc. Make sure to get all around it. Then season with salt and pepper, again making sure to season the whole potato or potatoes.

Place the potato in the middle of the preheated waffle iron. Then close the iron and smash the potato until the iron can close properly. On my style of iron, you actually rotate it over once it is closed.
Allow the potato to cook until it is golden brown and crispy. It will take 5 to 7 minutes, depending on your waffle iron. I use high heat, but not all waffle irons have temp settings.
Season and Serve those Potato Waffles

Remove the potato waffle from the waffle iron and serve it on a plate however you want. I like to eat them with eggs and ketchup. Some other options could be with sour cream, cheese, bacon, and green onion, pretty much however you like your baked potatoes, but those same fillings/toppings on your potato waffles.
They turn out so crispy on the outside and soft on the inside. Delicious. Enjoy!

Instructions
- Rinse and dry the potato or potatoes
- Soften the potato by cooking it in the microwave (poke holes in it with a fork), boiling it, or baking it in the oven. 5 to 7 minutes in the microwave, 20 to 25 minutes boiling it, or 45 to 55 minutes baking it. It needs to be really soft.
- Leave the skin on or remove the skin. Poke more holes in the cooked potato. This will make it easier to smash in the waffle iron.
- Lightly cover the potato in cooking oil. I spray some on with my oil sprayer, but you can brush it on as well.
- Season with salt and pepper.
- Make sure to preheat your waffle iron and spray it with cooking oil.
- Add the softened and seasoned potato to the middle of the waffle iron and cook it until golden brown and crispy. It will take 5 to 7 minutes or so.
- Remove the potato waffle with tongs and serve with ketchup, eggs, cheese, bacon, sour cream, etc. Enjoy!
