I love cookies, especially these homemade chocolate chip cookies. But sometimes I am looking for something a little healthier and something I can eat for breakfast without feeling super guilty, haha. So that is where these protein chocolate chip cookies come in. They are tasty, healthy, and don’t have any gluten, making them the perfect guilt-free breakfast.

To make this protein chocolate chip cookie recipe at home, you need just 5 simple ingredients:

  • Egg – The egg is optional, but I always add it. It also adds a bit of protein to each cookie.
  • Bananas – These help give the cookie body and texture.

  • Peanut Butter – I use organic typically, but any peanut butter will work.
  • Chocolate chips – Use whatever kind that you want.

How to make high protein chocolate chip cookies at home

Start by preheating the oven to 350°F, which is 176 °C.

Add the ripe bananas and the egg to a medium bowl and mix until combined. Next, add the whey protein, the peanut butter, and the chocolate chips, and mix until combined. There you go, that is all you need to do for this high-protein cookie dough.

NOTE: If you are using organic peanut butter, the dough will be loose or runny, similar to thick pancake batter. That is common, so don’t worry about it. If you use normal peanut butter that you don’t have to stir, the dough won’t be as runny, and if you leave the egg out.

You can make the cookies the size that you want. I usually make 6 really big ones. Just use a spoon or cookie scoop and put two heaping tablespoons of dough to form rounds. They will look like pancakes if you use organic runny peanut butter.

Bake the cookies for 12 to 16 minutes until lightly golden brown on top. Then allow them to cool for a few minutes before transferring them to a wire rack to cool the rest of the way.

Instructions

  • Preheat the oven to 350F or 176C
  • Combine the soft ripe bananas, egg, whey protein powder, chocolate chips, and peanut butter in a medium bowl.
  • Place a few spoonfuls of cookie dough to form the cookie on a cookie sheet or sheet pan. Use parchment paper or a silicone baking mat if you don't have a nonstick cookie sheet. You should get 6 large cookies, or you can make 8 to 12 smaller ones.
  • Bake the cookies for 12 to 16 minutes until golden brown. Allow them to cool for a few minutes on the pan, then transfer them to a wire rack to cool completely.
  • Enjoy the cookies! Store uneaten cookies in an airtight container for a day or two at room temperature and then another day or two in the fridge, after that they should be frozen. Enjoy!

    I tweaked the recipe a bit, omitting the egg and added a tbls of ground flax seed, then substituted 50g of Nature’s Promise vanilla plant-based protein & greens powder and, instead of peanutbutter, I measured 250g of PBFitClassic peanut powder plus 3/4 cup of water. It made 14 good-sized cookies. They didn’t spread like yours did, so after baking for about 12 minutes, I pressed them a bit with a fork and baked a bit longer. My 13yo grandson taste-tested them and said, they were pretty good. I personally do not care much for the taste of protein powders (too sweet and a bit of an aftertaste) but this recipe seemed to help tone that down somewhat.
