I love ice cream and I love chocolate chip cookies. This ice cream cookie sandwich or homemade Chipwich is so amazing. If you love cookies and ice cream you have got to try this recipe!
Growing up of course I loved all kinds of different cookie recipes. But I also loved ice cream, put the two together and it is pretty much heaven for a kid, and now an adult.
The Chipwich brand is the original ice cream cookie sandwich which was developed in the 1980s. They were so popular. Who wouldn’t like chocolate chip cookies with vanilla ice cream in the middle surrounded by mini chocolate chips?
I was always excited to eat one. They can easily be made at home. If I can do it, you can do it. Let’s get started!
Step 1: Gather the ingredients
In order to make a Chipwich or ice cream cookie sandwich at home you need just a few ingredients:
- Chocolate chip cookies – Or you can use other cookies like snickerdoodles, macadamia nut cookies, chocolate cookies, sugar cookies, etc. And of course, you will need the ingredients to make whatever cookies you decide on. My favorite is the chocolate chip cookie ice cream sandwiches.
- Ice cream – The classic flavor to use is vanilla ice cream, but you can use whatever kind of ice cream that you want. Use homemade ice cream or store-bought. If making homemade, you will need the necessary ingredients for that recipe as well.
- Mini chocolate chips – These are optional but I like to add them.
- Chopped nuts – Use chopped walnuts, pecans, peanuts, etc. Again optional, but I like to make a variety, so I make some with the nuts.

- Ice cream scoop
- 8×8 or 7×11 baking pan (optional)
- Parchment paper
- Plastic wrap
- Round Cookie/Biscuit cutter
Step 2: How to make an ice cream cookie sandwich Chipwich
There are a few ways for making these yummy ice cream cookie sandwiches. For one of the methods you need to create an ice cream slab or block. To do this, take a baking pan like an 11×7 inch pan and line it with parchment paper.
Leave out the ice cream for about 10 minutes so it softens, then scoop it out and spread it evenly in the pan. Place another piece of parchment paper on top. Then put the pan in the freezer and let the ice cream freeze again. This will take a few hours to get firm.
You can use store-bought ice cream or make your own, which ever you prefer.
Step 3: Bake those cookies
Next bake the cookies. The chocolate chip cookie is the classic cookie used for the famous Chipwich ice cream cookie sandwich. I really love this homemade chocolate chip cookie recipe so I use it most of the time. But you can use whatever kind of cookie you want. Have fun with different combinations.
Once the cookies have been baked, place them on a wire rack to cool completely. Then put them in the freezer for about 30 minutes. While not necessary, if the cookies are two soft, they may crack when placed on the ice cream.
Step 4: Ice cream cookie sandwich – Method 1
Now time to assemble these homemade Chipwiches. The first method is the easiest method. Set out the ice cream for about 10 minutes to soften. Then take an ice cream scoop and scoop a small scoop or large scoop depending on the size of the cookie, and place it on a turned over cookie.
Then just take another cookie and place it on top of the ice cream and press down with your fingers sandwiching the ice cream in the middle. Pretty easy right?
You can leave them plain, or if you like roll them in a bowl of chopped nuts or mini chocolate chips. If the ice cream is melting, place the sandwich cookie in the freezer for 30 minutes before adding the nuts and or mini chocolate chips.
Wrap it up in plastic wrap and place it in the freezer until you are ready to serve it. If the ice cream in the middle is too soft, it will get squeezed out once you bite into it, haha. So it is better to eat them frozen.
Step 5: Ice cream cookie sandwich – Method 2
For the other method, take the ice cream slab out of the freezer. It needs to be very firm, not soft like the other method. Remove the top layer of parchment paper. Then choose a cookie/biscuit cutter that is roughly the same size as your cookies.
Cut out a “hockey puck” looking round piece of ice cream and place it on the cookie. You will probably need to use your fingers or back of a spoon to push the ice cream out of the cutter. Make sure your hands are clean or wear gloves!
Then do like in method 1, put the other cookie on the top press it down just a little bit, and then roll it in nuts or mini chocolate chips. If they aren’t sticking you may need to use your hands to place them on and press them in a little bit. Wrap it up and put it in the freezer.
I really like this method because it looks cleaner. Although it does take more time to do the “ice cream slab” or “hockey puck” method.
Step 6: Serve those ice cream cookie sandwiches
Technically you can serve the ice cream cookie sandwiches or Chipwiches right away, but again they are better when completely frozen. Less chance for the ice cream to ooze out when you bit into them.
Once they are frozen, remove the plastic wrap and serve them. Have fun making your own combinations. Enjoy!
How long do ice cream cookie sandwiches last?
If wrapped in plastic or placed in plastic bags, they will last 2 to 3 months in the freezer.

- 24 chocolate chip cookies (Or use any of your favorite cookies)
- 12 scoops of vanilla ice cream – storebought or homemade
- Mini chocolate chips
- Nuts
Instructions
- Bake your favorite cookies and let them cool completely on a wire rack. Then put them in the freezer for about 30 minutes.
Method 1
- Take the ice cream out of the freezer and let it soften for about 10 minutes. Remove the cookies from the freezer. Take a cookie and flip it over, then place a scoop of ice cream on top. Take another cookie and place it on top of the ice cream and press down.
- Then optionally you can take the ice cream sandwich and roll it in some nuts or mini chocolate chips.Next, take some plastic wrap and wrap them up and put them back in the freezer for 30 minutes to an hour or more.
Method 2
- Line a baking pan with parchment paper, then add softened ice cream to it, and spread it out evenly. Then place another sheet of parchment paper on top. Put it back in the freezer for a few hours to harden up again.If using this method, do this before baking the cookies.
- Take that ice cream slab out of the freezer, the ice cream should be very firm. Remove the top layer of parchment paper. Then take a biscuit cutter that is roughly the same size as your cookie, and cut out a round bit of ice cream from the block.Place it on the cookie, and push the ice cream out of the cutter with the back of a spoon or clean fingers. Place another cookie on top.This method takes more time, but the results are nicer in my opinion.
- Again, roll them in chocolate chips or nuts. If they are having a hard time sticking, you may need to just place them with your fingers. Use clean hands or wear gloves! Then just wrap it up and freeze.Technically you can eat them right away, but if the ice cream is too soft, it will squish out when you bit into it, haha. Better to freeze it completely and eat it frozen. 🙂
Eat them!
- When you are ready to serve them, take them out of the freezer and each person can unwrap their own, and eat them. Have fun creating your own combinations with different cookies and ice cream. Enjoy!
