I love Red Velvet Whoopie Pies, they are one of my favorite cookies to make. These cookies are super easy to make and perfect for Valentine’s Day or any occasion.
Impress your friends and family or special someone with these delightful cookies. And the best part is they only require five ingredients! If I can do it you, you can do it. Let’s get baking!
Step 1: Gather the ingredients and the tools
In order to make these amazing red velvet whoopie pies you need the following ingredients and tools:
- Red Velvet Cake Mix – The red velvet cake mix is the main base for these cookies. We are essentially making cake mix cookies. I always love repurposing cake mixes and using them for things other than cake.
- Frosting – Use whatever kind of frosting that you like. Buttercream frosting is one of my favorite things to use, you can buy storebought frosting or make it from scratch.
- Large eggs – The eggs will help with the structure of the cookies as well as help make them softer and add moisture.
- Vanilla Extract – The vanilla extract will add flavor and enhance the flavor of the other ingredients.
- Butter – The butter will add flavor.
Tools
- Cookie Sheet
- Artisan Mat or parchment paper
- Cooling Rack
- Wooden spoon
- A tablespoon or mini ice cream or cookie scoop.
- Large bowl
- Scissors
- Rubber spatula
- Large bag or piping bag
Step 2: How to make Red Velvet Whoopie Pies
Preheat the oven to 375 F/190 C. Melt the butter and pour it into a large bowl. Use the microwave or stovetop to melt the butter. Add the cake mix, eggs, and vanilla extract to the bowl with the melted butter. Use a wooden spoon to combine all those ingredients together. This will form the red velvet whoopie pies dough.
*Note don’t follow the ingredients list on the back of the box.
Step 3: Bake those cookies
Take a half ball-shaped tablespoon or a small ice cream or cookie scoop and scoop out balls of dough. Place them onto a cookie sheet lined with parchment paper or a silicone mat. Space them about two inches apart. Then bake them in the oven in the middle position for 8 to 9 minutes.
Step 4: Cool and assemble
Once the cookies come out of the oven allow them to cool completely. Next take a plastic bag or piping bag and add the frosting to it. You can make your own frosting or just use store bought frosting. Pipe frosting on the bottom of one cookie. Then place another cookie on top which will finish the red velvet whoopie pies.
Now all you have to do is eat those yummy red velvet whoopie pies. They make a great gift for friends, family, or that special someone. Enjoy!
How long do red velvet whoopie pies last?
These amazing treats will last 3 to 5 days in an airtight container at room temperature or in the fridge. They may dry out slightly but will still be yummy. You can also wrap them individually in plastic and freeze them for up to 3 months. Then just thaw them out overnight in the fridge before eating them. You may also thaw them out at room temperature.
Red Velvet Whoopie Pies
Equipment
- cookie sheet
- Artisan Mat or parchment paper
- cooling rack
- Wooden spoon
- Half ball tablespoon or cookie scoop
- Large bowl
- Scissors
- Rubber spatula
- Large bag or piping bag
Ingredients
- Red Velvet Cake Mix
- Frosting Whatever kind you like
- 2 Large eggs
- 1 tsp of Vanilla Extract about 5 ml
- 6 Tbsp of butter melted (about 85 g)
Instructions
- Begin by preheating the oven to 375 F/190 C. With the rack in the middle position.
- In a large bowl add the cake mix. Then add in the eggs, vanilla extract, and melted butter. Melt the butter in the microwave or on the stovetop. Use a wooden spoon to mix the ingredients together until it forms a dough.
- Scoop the dough with a half ball tablespoon or cookie scoop onto a sheet pan or cookie sheet lined with parchment paper or a silicone mat. Place the dough balls 2 inches apart. Bake them in the oven for 8 to 10 minutes. They will spread out and crack on the top.
- Remove the cookies from the oven and allow them to cool for 10 to 15 minutes. Then make homemade frosting or use storebought. Place the frosting in a plastic bag for piping bag and pipe frosting onto the bottom of one of the cookies. Now just set another cookie on top of that one completing the whoopie pie or sandwich. Enjoy!
