Growing up we used to make homemade fruit leather all the time, so this strawberry fruit leather recipe brings back a lot of memories. And the cool thing about this simple fruit rollup recipe is you don’t need a dehydrator although if you own one already you can certainly use it.

Ingredients

To make strawberry fruit leather from scratch you only need these 3 simple ingredients:
- Strawberries – I usually use frozen strawberries because I always have a big bag of them in my freezer. But you can use fresh strawberries as well.
- Lemon juice – The lemon juice will add a bit of acidity which will enhance the flavor of the strawberries and resulting fruit leather and fruit rollups.
- Honey – Honey is my sweetener of choice here, but you can also just use regular granulated sugar if you wish.

- Spoon
- Sheet pan or cookie sheet
- Silicone baking mat or parchment paper
- Wax paper
- Scissors or pizza roller
How to make strawberry fruit leather at home without using a dehydrator

The process for making fruit leather and fruit rollups at home is very simple. Add the frozen or fresh strawberries to a medium pot, or larger pot if doubling or tripling the recipe. Then add the honey or sugar and the lemon juice. The lemon juice can be freshly squeezed or the kind that comes in a bottle.

Place the pot on the burner and set the heat to medium. Stir and cook down the strawberries for 10 to 15 minutes until the mixture boils, becomes a little thicker, and the color is dark red.

Pour the mixture into a blender and blend on high for 30 seconds to a minute, it won’t take very long to get smooth.

Pour it out onto a sheet pan or cookie sheet lined with parchment paper or a silicone baking mat. Then spread it out as evenly as possible using the back of a spoon or an offset cake spatula. You can also tap the pan on the counter a few times to help level it out. The more level it is the better it will dry.

Place it in the preheated oven at 180F/82C and allow it to dry for 3 to 5 hours. The length of time will just depend on how thick the fruit leather is. Touch the top of it, if it is no longer soft and sticky, it is ready. It will also be very deep red in color when it is done. Let it cool completely around 30 minutes to 45 minutes.

Now add a piece of wax paper on top then flip it over and gently remove the silicone baking mat. If you used parchment paper instead, just remove it from the pan or cookie sheet and proceed to rolling it up.

Now you can use kitchen shears to cut it into individual fruit rollups. You can also use a pizza roller when it is flat and cut it into strips then roll each strip up if desired.

How long does it last?
Store the fruit leather or fruit rollups in an airtight container at room temperature for up to 4 weeks.
Can I make this same fruit leather with other fruit?
Yes, you sure can! Just follow the same steps, you may need to adjust the amount of sweetener you use depending on the fruit. Apricots, plums, peaches, nectarines, and mangoes are all great options. Have fun experimenting with other fruits!

Ingredients
- 4 cups of strawberries fresh or frozen (approx 600g)
- 2 Tbsp of honey or sugar 30g
- 2 Tbsp of lemon juice about half of a medium lemon (26g)
Instructions
- Add the strawberries, honey or sugar, and lemon juice to a medium pot.
- Set the burner to medium heat and stir the mixture occasionally for 10 to 15 minutes, it will boil and reduce a little and thicken. When it is dark red and the fruit is very very soft it is ready.
- Preheat the oven to 180F/82C. Pour it all into a blender and blend for 30 seconds to a minute until nice and smooth.
- Pour the fruit leather base onto a sheet pan lined with parchment paper or a silicone baking mat. Spread it out as evenly as possible with the back of a spoon or an offset cake spatula.
- Place in the oven and let it dry for 3 to 5 hours. The amount of time will just depend on how thin the mixture is. It will be done when it is no longer sticky to the touch and will be a deep dark red.
- Remove it from the oven and allow it to cool completely, it will take at least 30 minutes.
- Once it has cooled, place a piece of wax paper on top and then flip it over and gently peel off the silicone baking mat. Or if you use parchment paper you can skip this step. Then roll up the fruit leather and snip it into sections to make fruit rollups. Store them in an airtight container at room temperature for about 4 weeks or so. Enjoy!
