  • Hand mixer
  • Spatula
  • Sifter
  • Bowls
  • cookie sheet
  • silicon mat or parchment paper
  • cookie rack

  • 1 cup all-purpose flour 128g
  • 1/4 cup unsweetened cocoa powder 25g
  • 1/2 tsp. of salt 3g
  • 1 tsp. of baking soda 5g
  • 10 to 11 oz dark chocolate chips milk chocolate, semi-sweet (326g)
  • 1/2 cup of butter 113g
  • 1/4 cup of white granulated sugar 50g
  • 1/2 cup packed brown sugar 100g
  • 1 large egg
  • 1 tsp of vanilla extract 5mL
  • powdered sugar for dusting optional

  • Preheat the oven to 325 F/162 C.
  • Separate the chocolate chips evenly into two small bowls. Set one bowl aside and melt the other bowl of chocolate. Use the microwave or a double boiler. In the microwave use bursts of 25 seconds and then stir, etc. Until melted.
  • Cream the butter and both sugars together in a large bowl, with a mixer. Add the egg and vanilla extract and mix those ingredients in.
  • Pour the melted chocolate chips into the large bowl with the batter. Mix until just combined.
  • In a separate medium-sized bowl sift together the flour, cocoa powder, salt, and baking soda. Use a whisk, if you don't have a sifter.
  • Add the flour mixture to the cookie batter about half at a time and mix to form the dough. Add in the remaining chocolate chips. Mix them in with the mixer or use a wooden spoon.
  • Use a cookie scoop or two spoons and create dollops of dough and place them on a baking tray lined with parchment paper or a silicone mat. Place them 1 and a half to 2 inches apart. Bake one tray at a time, for 15 to 18 minutes. If you want softer cookies to bake them for 14 to 15 minutes. Allow the cookies to cool on the pan for a few minutes, and then transfer them to a wire rack to cool.
  • Dust the tops of the cookies with powdered sugar if you like and serve them up. Store them at room temperature in an airtight container or freeze them. Enjoy!
