No-Bake Peanut Butter Cookies
These no-bake peanut butter cookies are perfect for people who love peanut butter and cookies. Also, they are gluten-free! And it only takes a few everyday ingredients to make them.
Servings: 24 cookies
Wooden spoon or Silicone Spoon
Silicone Mat or parchment paper
Sheet pan or cookie sheet
- 1 3/4 cups of white granulated sugar 350g
- 1/2 cup of milk 1%, 2%, Whole, etc. (125ml)
- 1/2 cup of unsalted butter 115g
- 3/4 cup of peanut butter 190g
- 1 tsp. vanilla extract 5ml
- 3 1/4 cups of old fashioned or quick oats 295g
Add the milk, butter, and sugar to a medium saucepot. With burner set to medium heat, bring the milk and sugar to a boil. After it comes to a rolling boil allow it to cook for 1 minute before removing it from the heat.
After you remove the pot from the heat pour it into a large bowl and then stir in the vanilla extract and the peanut butter. Once the peanut butter has melted, add in the oats. Stir the oats until completely coated.
Spoon the peanut butter oatmeal onto a cookie sheet lined with parchment paper or a silicone mat. They won't spread, so you can put them pretty close together. Shape the cookies with the spoons to get them more round if you like.
Chill the cookies in the fridge for at least 30 minutes until they have set. Enjoy!
If you are having trouble with the cookies setting, try boiling the mixture a little longer before removing it.
